It gave the beer a lot of whiskey character

tommie sjef sprong 2022 lambiek geuze bier 75 cl BTW Hoog orange peel and panela sugarSprong is a mix of wild ales, aged for approximately 2. 5 years in oak puncheons (500 liters), and a barrel fermented and aged saison beer. This saison was fermented in a large oak barrel and later transferred to oak barriques (225L) for another 6 months. Before the two parts were mixed together, the saison was lightly dry hopped for another 3 months. We added a touch of Sicilian sage to the final blend to macerate for a few days before bottling.
